Mystery Pudding  (Baked)

Ingredients   

4 tablesp, Marmalade
1 oz butter or margarine
1 pt milk
1oz sugar
½ pt breadcrumbs
3 eggs
2-4oz castor sugar

Method

  1. Butter a 2pt pie-dish & cover the bottom pf dish with marmalade.
  2. Heat together the butter, milk, and 1oz sugar. Add the breadcrumbs and leave to stand for about 10 min.
  3. Beat together 1 egg & 2 egg yolks & stir well Into the breadcrumbs mixture.
  4. Pour half the breadcrumb mixture into the dish; add another layer of marmalade, & put the remainder of the breadcrumb on top.
  5. Bake in oven 350f gas 4 until the mixture is set.
  6. Whip the egg whites stiffly, fold in the 2-4oz castor sugar & pile on top of the pudding.
  7. Dredge well with castor sugar.
  8. Bake in cool oven 290f gas 1 for about 20-30 min until the meringue is crisp

 

Marmalade pudding (Steamed)

Ingredients

Rind of 1 lemon
4oz finely-chopped suet
4 oz plain flour
4 oz Sultanas
pinch salt
2 oz castor sugar
1 level tsp baking powder
4 tablesp Marmalade
4 oz breadcrumbs
2 eggs
5 fluid ounces milk ( appox)

Method

  1. Grease a basin.
  2. Grate the lemon rind.
  3. Sift together flour, salt, baking powder.
  4. Mix the breadcrumbs, suet, lemon rind, sultanas & sugar.
  5. Stir in the marmalade, beaten eggs & milk. Use enough milk to make the mixture of a dropping consistency.
  6. Put into basin; cover; steam for 1 ½  - 2 hrs.
  7. Serve with marmalade sauce.

Marmalade Sauce

4 Tablespoons Marmalade
1 Tablespoons whisky (optional)
Heat marmalade & whisky pour over pudding


 

Autumn Recipe - Apple Cake

Ingredients

125g-4oz Margarine
225g-8oz Sultanas
175g-6oz Castor Sugar
50g-  2oz Currants
2 eggs
225g-8oz Cooking Apples
225g-8oz Plain Flour
approx 12 sugar cube white
½ tsp Bi-Carbonate Soda
½ tsp Mixed Spice

Method

  1. Cream Sugar & Margarine until light & creamy
  2. Add eggs & fold in flour.
  3. Stir in fruit & grated apple.
  4. Put mixture into 8 inch cake tin add crushed sugar lumps on top.
  5. Bake Gas 4 - 350f -approx 1 ¼ hours.

This cake freezes very well. We use this cake for packed lunches at Coniston Lodge.
